Here’s what you’ll need to make this fall-tastic treat:
2 scoops VeganSmart
1 cup all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 ½ teaspoons pumpkin spice
2 tablespoons dark brown sugar
2 tablespoons vegetable oil
¾ cup almond milk
½ cup pumpkin puree
In a mixing bowl, add 2 scoops of VeganSmart Vanilla Flavor, 1 cup all-purpose flour, 1 teaspoon of baking powder, ½ teaspoon baking soda, ¼ teaspoon salt, and 1 ½ teaspoons pumpkin spice. Mix the ingredients together thoroughly.
In a separate mixing bowl, add 2 tablespoons of dark brown sugar, 2 tablespoons of vegetable oil, ½ cup pumpkin puree, and ¾ cup almond milk. Mix together thoroughly.
Take the flour mixture and combine it with the pumpkin puree mixture. Mix until the batter is smooth and uniform.
Spray cooking oil onto a preheated frying pan. Spoon ⅓ of the batter into the frying pan for each pancake. Cook for about 3 minutes or until golden brown and the pancakes have risen. Flip the pancake over to brown on the other side. Cook until the edges are solid and pancake is golden brown.
