Vegan Banana Walnut Muffin Recipe

After craving banana walnut muffins for over a week, our SuperFan Jaclyn decided to create a vegan version of Starbucks banana walnut muffin which uses all animal products in their pastries.


  • 1/2 c gluten free flour
  • 1/3 tsp baking soda
  • 1 banana
  • 3 tbsp Vanilla VeganSmart 
  • 1 tbsp water
  • 1/2 tbsp flax seeds
  • 1/ 2 tsp vanilla extract
  • 2 tbsp coconut oil
  • 1 1/2 tbsp peanut butter


  1. Blend in food processor then pour batter into muffin tins
  2. Bake at 350 for 10-12 minutes until fully cooked.

The end result will be soft and delicious.

      Yes of course, if that is what you prefer! The difference is that VeganSmart Vanilla is a meal replacement and Pea Protein is not. It’s a protein booster.
