- 3 Tbsp flax meal plus 1/2 cup water (let sit 5 min)
- 2 ripe, mashed bananas
- 2 cups gluten free oats
- 1 cup shredded coconut
- 1/2 cup almond butter
- 1/3 cup coconut sugar
- 1/4 cup maple sugar
- 1/4 cup coconut oil
- 2 scoops Organic VeganSmart french vanilla pea protein
- 1 Tbsp cinnamon
- 1 Tbsp apple cider vinegar
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/4 tsp salt
- Optional add-ins: 1/2 – 1 cup mini chocolate chips and/or 1/2 cup hemp hearts.
Mix everything together in a large bowl and drop by spoonfuls onto a parchment lined cookie sheet. Flatten gently. Bake at 350°f until golden!
