Vegetable vegan soup is a hearty, healthy meal for any season. This veggie bean quinoa soup recipe is perfect for people who eat a plant-based diet because it is packed with protein to keep you fueled all day.

Veggie Bean Quinoa Soup
1 cup cooked quinoa
3 garlic cloves
1 large sweet potato, chopped
6 cups vegetable broth
1.5 cups of black beans (drained)
2 handfuls of kale
- Cooking the quinoa: Add quinoa into a pot along with 1.5 cups of water. Bring to a boil then reduce heat to medium, cooking the quinoa until it is fluffy. This should take 15-20 minutes. Then, remove the quinoa from the heat.
- Cooking the vegetables: Saute garlic in a pan at medium heat. Add sweet potato and jalapeno and saute for 5 minutes more.
- Cooking the broth: In a pot separate from the quinoa, heat the broth by bringing it to a boil then reducing to medium heat. Remove from heat after 20 minutes.
- Right before serving, mix the quinoa, broth, vegetables, kale and beans. The beans and kale will cook in the heat.
